Here is the thing: 80'C degree water takes 3 times shorter time to get freezed than 20'C degree water.
Here is my speculation: Water phase change may be solely a function of the amount of heat in the measure of temperature, but the heat transfer impedance is affected by the heterogeneity of molecular energy. By heterogeneity I mean the following: As the initial temperature of water increases, the water molecules gets more unstable. When the heat dissipates out of the water molecular group, ....
